In conversation with Khyati Kale, Co-Founder of Gourmetly Yours, she explores how curated cuisine and theatrical grazing are redefining the art of entertaining, where food is no longer just served, but designed, styled, and brought to life with intention.
Question- The way people experience food at gatherings seems to have shifted significantly. What change have you observed, and what’s driving it?
Food has always been central to gatherings, but the way we experience it today is evolving in a far more intentional and expressive direction. What was once about feeding guests has transformed into engaging them, visually, emotionally, and sensorially. At Gourmetly Yours, this shift is something we’ve not only witnessed but actively shaped. We’re in the midst of an era where food is no longer just served; it is designed, styled, and brought to life with purpose.
This movement stems from a growing preference for experiences over excess. Traditional buffets, while generous, often miss the element of interaction and storytelling. Today’s hosts are seeking something more thoughtful, setups that feel personal, immersive, and alive.
Question- You use the term ‘theatrical grazing’, how would you define it, and what does it look like in practice?
– Grazing tables, once simple assortments, have evolved into curated landscapes. They are built with layers of texture, colour, height, and movement, tables that draw guests in, spark curiosity, and invite them to engage rather than simply serve themselves.
At Gourmetly Yours, we often refer to this evolution as the floating era, a more fluid, dynamic approach to dining. Theatrical grazing introduces a performative quality that changes how food is perceived and enjoyed. A canapé assembled live, a sushi roll finished in front of guests, or a grazing table that subtly transforms through the evening—these are not just details, but moments. There is rhythm, anticipation, and a sense of discovery. Food becomes a conversation starter, seamlessly weaving itself into the social fabric of the gathering.
Question- How has the rise of visual platforms and social media influenced the way curated cuisine is designed and presented?
– This evolution is closely tied to the way we experience the world today. With visually driven platforms shaping how we share and remember moments, presentation has become as significant as flavour. But beyond aesthetics lies something far more meaningful, intentionality. Curated cuisine is about telling a story. It could be inspired by a host’s travels, rooted in nostalgia, or built around seasonal ingredients. Every element is considered, from the sourcing of ingredients to the plating, the styling, and even how a guest interacts with the dish.
Question- There’s been a visible shift toward smaller, more intimate gatherings. How does that influence your approach to food design?
– We’ve seen a clear shift toward more intimate gatherings. Smaller celebrations allow for greater attention to detail and deeper personalisation. Hosts today are more involved in the creative process; they want their events to reflect who they are. In this setting, food becomes a powerful medium of expression, subtle, yet impactful. It’s not just about impressing guests, but about creating a sense of connection and warmth that feels genuine.
For us, this shift has redefined what it means to cater. It’s no longer about logistics alone; it’s about designing experiences. Each event becomes a canvas where culinary expertise meets aesthetic sensibility and human connection. The most memorable setups are often the ones that feel effortless to the guest, yet are intricately layered with thought and intention behind the scenes.
Question-There’s also a renewed appreciation for craftsmanship and artisanal techniques. What does that mean for Gourmetly Yours and how you build your menus?
Handcrafted elements, artisanal techniques, and thoughtful pairings are no longer considered indulgent, they are expected. Whether it’s delicately folded dim sums, house-made condiments, or carefully balanced flavour profiles, there is growing respect for the effort behind the experience. Guests are more aware, more curious, and more appreciative of the story behind what they’re eating.
Alongside this is a renewed appreciation for craftsmanship. This means every detail we bring to an event carries weight, not just as an aesthetic choice, but as a reflection of values. We source thoughtfully, prepare with care, and present with purpose. For our clients, this level of attention is what transforms a gathering into something truly memorable.
Question- What does the future of dining and curated food experiences look like to you?
The rise of theatrical grazing and curated cuisine ultimately reflects a larger cultural movement, one that values quality over quantity, depth over routine, and connection over convenience. It encourages us to slow down, to be present, and to truly experience not just the food, but the moment it creates.
As this culture continues to evolve, one thing is certain: the future of dining is deeply personal. The table is no longer just a place to eat, it is a canvas, a stage, and a shared space where stories unfold and memories are quietly, beautifully created.
